One Pan Italian Chicken and Veggies

Time: 25 minutes
Servings: 2


  • 280g Chicken Breast (cut into large cubes)
  • 100g Broccoli (cut into small florets)
  • 40g Red Onion (cut into thick slices)
  • 75g Cherry Tomatoes
  • 1 Zucchini
  • 15ml Extra Virgin Olive Oil
  • 2g Italian Seasoning
  • 2g Garlic Powder
  • Sea Salt and Black Pepper to taste


  1. Preheat the oven to 220° and line a baking sheet with parchment paper.
  2. Add the chicken, broccoli, red onion, zucchini and tomatoes to the baking sheet.
  3. Add the oil and season with the Italian seasoning, garlic powder, sea salt and black pepper.
  4. Bake for 16-18 minutes or until the chicken is cooked and the vegetables are tender, stirring halfway if needed. Season with additional salt and pepper if needed.
  5. Divide evenly between plates or meal prep containers as needed.
  6. Enjoy!


Refrigerate in an airtight container for up to three days.

More Flavour:
Add other dried herbs and spices to taste.

To serve:

Serve it with rice, cauliflower rice or quinoa. Add avocado or a dipping sauce like hummus or tzatziki.
