Ingredients:
- 280g Chicken Breast (cut into large cubes)
- 100g Broccoli (cut into small florets)
- 40g Red Onion (cut into thick slices)
- 75g Cherry Tomatoes
- 1 Zucchini
- 15ml Extra Virgin Olive Oil
- 2g Italian Seasoning
- 2g Garlic Powder
- Sea Salt and Black Pepper to taste
Directions
- Preheat the oven to 220° and line a baking sheet with parchment paper.
- Add the chicken, broccoli, red onion, zucchini and tomatoes to the baking sheet.
- Add the oil and season with the Italian seasoning, garlic powder, sea salt and black pepper.
- Bake for 16-18 minutes or until the chicken is cooked and the vegetables are tender, stirring halfway if needed. Season with additional salt and pepper if needed.
- Divide evenly between plates or meal prep containers as needed.

Leftovers:
Refrigerate in an airtight container for up to three days.
More Flavour:
Add other dried herbs and spices to taste.
To serve:
Serve it with rice, cauliflower rice or quinoa. Add avocado or a dipping sauce like hummus or tzatziki.
