Ingredients
- Protein (1 palm)
- 100g extra lean mince or ostrich mince
- Colourful Veg (1 fist)
- 1/2 red salad onion
- 50g of peas
- 50g of steamed diced carrots (optional)
- Smart Carb (1 cupped hand)
- 100g Mashed sweet potato
Tip: steam sweet potato in the microwave making use of a microwave steam bag and then mash or cut the corner of a pre-cut packet of sweet potato and steam in microwave till soft, mash in packet. Refrigerate the left-over for later use.
- 100g Mashed sweet potato
- Healthy Fat (1 thumb)
- 1 tsp olive oil
- Herbs, spices, Extras

- 1/2 tsp Salt
- 1/2 tsp Ground black pepper
- 1 heaped tsp Paprika
- 5g freshly chopped Parsley

Instructions
- Pre heat your pan over medium heat with olive oil.
- Dice the onion and fry in olive oil till golden brown.
- Add the mince and fry till cooked.
- Season with paprika, salt, pepper and parsley.
- Add the peas and carrots and mix well.
- Prepare your baking dish or ramekin with non stick spray and add the mince mix.
- Evenly distribute and press down generously.
- Season the mashed sweet potato with salt and add on top of the mince.
- Distribute evenly and finish of with a sprinkle of paprika and ground black pepper.
- Bake for 15-20min or until sweet potato is crispy on top.
- Serve warm.
