Ingredients
- Protein (1 palm)
- 2 eggs
- Colourful Veg (1 fist)
- 5 whole peppadews
- 100g wilted spinach
Tip: wilt spinach in a bowl by pouring boiling water over it and soaking it for a few minutes
- Smart Carb (1 cupped hand)
- 100g steamed sweet potato
Tip: steam sweet potato in the microwave making use of a microwave steam bag, or cut the corner of a pre-cut packet of sweet potato, and refrigerate the left-over for later use
- 100g steamed sweet potato
- Healthy Fat (1 thumb)
- 1 tsp olive oil
- Herbs, spices, Extras
- Salt
- Ground black pepper
- Parsley

Instructions
- Pre heat oven to 200’C
- Prepare preferred pan with nonstick spray or line with parchment paper.
- Cut the wilted spinach and peppadews into small pieces.
- Whisk the eggs and add salt, ground black pepper and parsley to taste.
- Pour a little bit of egg into the pan just to line the bottom and place in the oven for about a minute until the egg is set. This is to form the base for the frittata so that one can eat it with your hand if needed.
- Mix the spinach, steamed sweet potato and peppadew into the pan, whisk the leftover eggs again and pour over the vegetables.
- Place in the oven and bake for 15min.
- Remove from the oven and drizzle the top with olive oil and bake for another 5min to crisp up to perfection.
Enjoy
Best served hot or cold.
Can also be made in bulk making use of a muffin pan, perfect to refrigerate and to use during the course of the week.
